About the authors
ANDY DE SANTIS, RD, MPH, is a registered dietician who currently maintains a private practice. After obtaining his master’s degree from the University of Toronto, Andy began working at the Canadian Diabetes Association (now Diabetes Canada) where he gained an understanding of what it means to be diagnosed as a type 2 diabetic. He helps clients recognize what a powerful tool nutrition can be and shows them that it’s possible to still enjoy delicious meals.
Michelle Anderson is the author of multiple cookbooks focused on healthy diets and delicious food. She has worked as a professional chef for more than 25 years, honing her craft overseas in North Africa and all over Ontario, Canada. Michelle focuses on food as medicine and using wholesome, quality field-to-fork ingredients in vibrant and visually impactful dishes. Michelle lives in Temiskaming Shores, Ontario, Canada, with her husband, two sons, two Newfoundland dogs, and three cats.
