The Summit Restaurant Pumpkin Pancakes
Serves 4
1 cup unsalted butter, at room temperature
1/4 cup finely chopped roasted chestnuts (or any other roasted nut)
1 tsp finely chopped orange zest
2 cups buttermilk
1/3 cup pumpkin purée (not pumpkin pie filling)
3 Tbsp unsalted butter, melted
1 tsp pure vanilla extract
1 large egg
11/4 cups all-purpose flour
1/4 cup granulated sugar
11/2 tsp baking powder
1/2 tsp baking soda
1 tsp grated lemon zest
1/4 tsp pumpkin spice blend (or combine equal amounts of ground cinnamon, ginger, nutmeg, allspice, cloves)
Vegetable oil, for frying
Maple syrup, for serving
Orange marmalade, for serving
Icing sugar, for serving
